Hi Javier,
We have reviewed the server and think we have found the source of the issue.
The combination of our current SVN server + Apache + large svn repositories + the TortoiseSVN client seem to generate memory leaks on the server. This gradually depletes the server memory until none is available. On average it takes 2 weeks for the server to run out of memory.

https://bugs.launchpad.net/ubuntu/+source/subversion/+bug/273859Fixes applied:
- We have updated the Subversion server that came by default with the system (1.4.6) to the latest stable version (1.6.9).
- We have set the Apache directive MaxMemFree to 512 kb. This should 'reset' any huge memory consumption processes before they start leaking memory. However, large repository operations might be a bit slower than before.
We are doing some tests with TortoiseSVN locally. We'll also monitor the memory usage on the server during the following week.
